6 lbs dark malt extract
1/2 lb flaked barley
1 lb roasted barley 300L
.5 lb Crystal 120L
.5 lb Black Patent
2 ox Sterling (whole leaf) 60 min
1/2 oz Northern Brewer (pellet) 30 min
1/2 oz Norther Brewer (pellet) 10 min
1/2 tsp Irish Moss
Irish Ale Yeast
3/4 cup corn sugar prime

Steep grains in 1.5gal water at 165 for 45 min. Sparge w/ 2 gals warm water. Bring to boil, come off heat and add extract and malt, kent Golding hps and Iris Moss. Bil 60 min, add hops on schedule. Cool wort and add 2 - 3 gals of cool water in primary fermenter. Pitch yeast at < 80degrees. Rack to secondary after 2-3 weeks.

I didn't do exactly this. I steeped at a higher temp for about .5hr and then added the rest. I also didn't rack.

Good nose, starts good but finished kinda flat. Did get specific gravity. Next time, pour a little of the cooled wort into a tall glass before into carboy to test sp.
